  • 3 large sweet potatoes, cubed
  • 1 onion, diced
  • 34 garlic cloves, minced
  • 2 cans diced tomatoes (15 oz each)
  • 1 can tomato sauce (15 oz)
  • 1 can pinto beans
  • 1 can black beans
  • 1 can kidney beans
  • 2 bell peppers, diced
  • 1 T cumin
  • 2 T chili powder
  • 1 tsp smoked paprika (optional)
  • ¼½ tsp red chili flakes
  • ½ tsp pepper
  • ½1 tsp sea salt, more or less to taste
  • ⅓ cup tomato paste

Instructions

  1. Combine all ingredients except the tomato paste in the slow cooker. Mix well to ensure everything is evenly distributed.
  2. Set the slow cooker to high for 4-6 hours or low for 6-8 hours until the sweet potatoes are soft.
  3. Once cooked, stir in the tomato paste to thicken the chili and let it sit for a few minutes before serving.
  4. Serve warm with desired toppings such as shredded cheese, avocado slices, or fresh cilantro.
