  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • 2 tablespoons ghee or olive oil
  • 12 tablespoons garlic, minced
  • 1/4 cup yellow onion, diced
  • 1/4 cup red onion, diced
  • 1/21 green bell pepper, diced
  • 1 pound ground beef
  • 1 teaspoon dijon mustard
  • 1 teaspoon yellow mustard
  • 3 tablespoons paleo ketchup
  • 2 tablespoons coconut aminos
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon apple cider vinegar
  • Sliced pickles
  • Pickled red onions

Instructions

  1. Preheat your oven to 415°F (210°C).
  2. Cut the sweet potato into 1/4 inch slices, toss with olive oil and salt, and roast for 10-12 minutes.
  3. In a cast iron skillet, heat ghee or olive oil over medium-high heat. Sauté garlic, onions, and bell pepper until softened.
  4. Add ground beef to the skillet and cook until browned. Drain excess grease.
  5. Stir in dijon mustard, paleo ketchup, coconut aminos, tomato paste, chili powder, apple cider vinegar, salt, and pepper; combine well.
  6. Assemble by placing roasted sweet potatoes in a bowl topped with the sloppy joe mixture and your choice of toppings.
