  • 2 large eggplants
  • 2 tbsp olive oil (divided)
  • 1 tbsp salt (divided)
  • 1 tsp black pepper (divided)
  • 1 white onion (diced)
  • 3 cloves garlic (minced)
  • 1 tbsp sumac
  • 1 tbsp Aleppo pepper
  • 2 tsp ground coriander
  • 1 bay leaf
  • 1 lb ground beef (or ground lamb)
  • 2 cups crushed canned tomatoes
  • 2 tbsp Turkish red pepper paste (or tomato paste)
  • 2 tbsp Greek yogurt
  • 1 clove garlic (minced)
  • 2 tbsp fresh dill (minced)
  • 1 lemon (juiced)
  • fresh mint (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut eggplants into 2-inch thick pieces, season with olive oil, salt, and pepper, then roast on a baking sheet for about 30 minutes until tender.
  2. In a large sauté pan, heat olive oil and sauté diced onion and minced garlic with spices until golden brown.
  3. Push the onions aside, add ground beef, breaking it up as it cooks until browned.
  4. Stir in crushed tomatoes, red pepper paste, and roasted eggplant; simmer on low for 20 minutes.
  5. Prepare the yogurt sauce by mixing Greek yogurt, minced garlic, fresh dill, and lemon juice in a bowl.
  6. Serve the moussaka hot with yogurt sauce drizzled on top and garnished with fresh mint.
