1 salmon fillet
1 medium sweet potato, peeled and sliced into wedges
1 cup broccoli florets
1 tsp soy sauce
1 tsp honey or maple syrup
1 tsp sesame oil
1 tsp olive oil
1 tsp paprika
1 tsp rice vinegar (optional)
1 tsp black sesame seeds
Salt & pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss sweet potato wedges in olive oil, paprika, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until crispy.
In a bowl, mix soy sauce, honey (or maple syrup), sesame oil, and rice vinegar if using. Place salmon on another baking tray, brush with glaze, sprinkle black sesame seeds on top, and bake for 12-15 minutes.
Steam broccoli in a steamer basket over boiling water for about 4-5 minutes until bright green and tender.
Plate the glazed salmon with roasted sweet potato wedges and steamed broccoli, then serve immediately.
