  • 1/4 cup Thai Red Curry Paste

  • 1 can (13.5 fl oz) Coconut Milk
  • 1 tsp Soy Sauce
  • Juice of 1 Lime
  • 5 pieces Chicken Thighs, fat trimmed
  • Chopped Spring Onions
  • Coriander
  • Lime Wedges
  • 2 tsp Chilli Oil
  • 1.5 cups Jasmine Rice

  1. Gather and prepare all ingredients by chopping garlic and ginger, and trimming fat from chicken thighs.
  2. In a large pot over medium heat, melt coconut oil and sauté ginger and garlic until fragrant.
  3. Add Thai red curry paste and cook for 2 minutes until aromatic.
  4. Stir in chicken broth concentrate and boiling water, mixing well.
  5. Pour in coconut milk, soy sauce, and lime juice; bring to a gentle simmer.
  6. Add chicken thighs; cover and simmer for 15 minutes until fully cooked.
  7. Meanwhile, rinse jasmine rice under cold water until clear and cook according to package instructions.
