  • 2 slices whole grain or sourdough bread
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • 2 soft-boiled eggs (boiled ~7 minutes)
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter
  • 45g cremini mushrooms, sliced
  • Salt & freshly ground black pepper to taste

Instructions

  1. Boil the Eggs: In a large pot, bring water to a boil. Gently add the eggs and boil for about 7 minutes. Transfer them to an ice bath to cool before peeling.
  2. Sauté the Veggies: Heat olive oil or butter in a skillet over medium heat. Sauté sliced mushrooms until golden brown, then add spinach and cook until wilted.
  3. Assemble Toast: Spread cream cheese on one slice of toast and top with tomato slices. Add sautéed mushrooms on the other slice.
  4. Plate & Finish: Arrange toast, soft-boiled eggs cut in half, and sautéed spinach on a serving plate. Season with salt, pepper, and garnish with parsley.
