  • 1 handful fresh spinach
  • 1 small tomato, halved
  • 45g sliced mushrooms (button or cremini)
  • 1 slice whole-grain bread
  • 1 tsp olive oil
  • Salt & pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Sauté the mushrooms in a skillet over medium heat with olive oil for 5-7 minutes until golden. Season with salt and pepper.
  2. Add spinach to the skillet and wilt for about 1-2 minutes.
  3. Roast or pan-sear the tomato halves until charred or soft.
  4. Toast the slice of whole-grain bread until crispy.
  5. Fry the eggs sunny-side-up in a non-stick pan until whites are set but yolks remain runny.
  6. Assemble on a plate starting with the toast, topped with mushrooms, fried eggs, wilted spinach, roasted tomato halves, and avocado slices if desired. Garnish with fresh parsley.
