  • 2 cups shredded rotisserie chicken
  • 1 cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp extra virgin olive oil
  • 2 cups chicken broth
  • 15.5 oz salsa verde
  • 1 can (4 oz) diced green chiles
  • 1 tsp chili powder
  • 1 can black beans, rinsed and drained
  • 1 cup white long-grain rice

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Sauté the onion and garlic until fragrant.
  3. Combine the spices in a bowl and add to the skillet.
  4. Stir in black beans, roasted corn, chicken, green chiles, chicken broth, salsa verde, and rice.
  5. Bring to a boil for 2-3 minutes; reduce heat to simmer and cover for 15 minutes.
  6. Check the rice; if needed, cook longer until done.
  7. Once cooked, top with cheese and let melt.
  8. Add cilantro, avocado slices, and red pepper flakes before serving.
