Ingredients

  • 1 salmon fillet (about 150g)
  • 2 eggs
  • 1 cup cherry tomatoes
  • 1 cup asparagus spears
  • 56 button mushrooms
  • Olive oil or butter

Instructions

  1. Season the salmon fillet with salt and black pepper. Heat olive oil in a skillet over medium heat and sear the salmon for 3-4 minutes on each side until golden brown. Remove and keep warm.
  2. In the same skillet, add more oil if needed and sauté mushrooms for 4-5 minutes until browned. Season with salt.
  3. Add trimmed asparagus to the pan and sauté for about 2-3 minutes until bright green but still crisp.
  4. In a separate pan, melt butter or olive oil over medium-low heat. Pour in whisked eggs and stir gently until just set.
  5. Blister cherry tomatoes in a hot pan or roast them in an oven at high heat for about 5-6 minutes.
  6. Assemble all components in a bowl and serve warm.
