Ropa Vieja Slow Cooker is a classic Cuban dish featuring tender, shredded beef simmered in a rich and flavorful sauce. Perfect for family dinners or gatherings, this dish brings the authentic taste of Cuba right to your table with minimal effort.

  • 22 ½ pounds beef flank steak
  • ¼ cup vegetable oil or more
  • Salt, pepper, cumin, and Sazon (adjust to taste)
  • 1 large bay leaf
  • 1 large onion (sliced)
  • 45 cloves garlic (minced)
  • 2 bell peppers (red or green, seeded and sliced into strips)
  • 2 tomatoes (sliced into strips)
  • 1 can (8 ounces) tomato sauce
  • 1 sprig thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 12 cups beef broth
  • 23 tablespoons parsley/cilantro
  • Salt and pepper to taste

Instructions

  1. Prepare the beef by trimming excess fat and seasoning generously with salt, pepper, cumin, and Sazon.
  2. Sear the beef in a skillet over medium heat until browned on both sides.
  3. In the same skillet, cook sliced onion, garlic, bell peppers, tomatoes, tomato sauce, thyme, smoked paprika, cumin, and beef broth until softened.
  4. Transfer three-quarters of the vegetable mixture to the slow cooker along with the seared beef and bay leaf.
  5. Cover and cook on high for 3 ½ – 4 hours or low for 7 – 8 hours until the beef is tender enough to shred.
  6. Combine cooked beef with remaining sauce before serving warm with rice or beans.
