  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh basil
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a baking sheet, spread the diced vegetables. Drizzle with olive oil and season with salt, pepper, Italian seasoning, and minced garlic. Toss to coat evenly.
  3. Roast the vegetables for 20–25 minutes until they are tender and caramelized.
  4. While roasting, boil water in a pot and cook orzo according to package instructions. Drain when done.
  5. In a large bowl, combine roasted vegetables with cooked orzo. Add feta cheese and basil; toss gently.
  6. Squeeze lemon juice over the mixture and toss again before serving.
