  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 cup ricotta cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon zest
  • Pinch of salt
  • Pinch of pepper
  • 1 cup honey
  • 1 teaspoon chili flakes
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons chopped pistachios
  • 1 tablespoon fresh parsley or chives, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the carrots in olive oil, garlic powder, smoked paprika, sea salt, and black pepper until well coated.
  3. Spread the carrots on a baking tray and roast for 20-25 minutes until golden brown and tender.
  4. In a food processor, blend ricotta cheese, heavy cream, lemon zest, salt, and pepper until smooth; chill before serving.
  5. Warm honey in a small saucepan over low heat; stir in chili flakes and apple cider vinegar to create hot honey.
  6. To serve, spread whipped ricotta on a plate, layer with roasted carrots, drizzle with hot honey, and sprinkle with chopped pistachios.
