  • 2 tablespoons plain Greek yogurt
  • 20 mini Reese’s Peanut Butter Cups (plus extra for garnish)
  • 1/2 cup room temperature butter
  • 1 1/2 cups creamy peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, combine the chocolate cake mix, eggs, milk, vegetable oil, and Greek yogurt. Mix until smooth.
  3. Fill each cupcake liner halfway with batter, place one mini Reese’s Peanut Butter Cup in the center, then top with more batter until two-thirds full.
  4. Bake for about 20 minutes or until a toothpick comes out clean.
  5. Allow to cool for five minutes in the tin before transferring to a wire rack.
  6. For the frosting, beat together room temperature butter and peanut butter until smooth. Gradually add powdered sugar and vanilla extract; adjust consistency with milk if needed.
