  • 1 1/4 cups lukewarm milk
  • 1/4 cup + 1 tablespoon unsalted butter, melted
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 cup fresh raspberries, finely chopped
  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix flour, sugar, yeast, and salt.
  2. In another bowl, whisk together lukewarm milk, melted butter, and eggs.
  3. Combine wet and dry ingredients until a dough forms.
  4. Knead on a floured surface for about 8–10 minutes until smooth.
  5. Place dough in a greased bowl; cover and let rise in a warm spot until doubled (about 1 hour).
  6. Prepare the filling by mixing sugar and cinnamon; toss in the raspberries.
  7. Roll out the dough into a rectangle; spread raspberry mixture on top and roll tightly.
  8. Cut into 12 slices and place in a greased baking pan; let rise for another 30 minutes.
  9. Preheat oven to 375°F (190°C) and bake for about 25 minutes until golden brown.
  10. While baking, prepare the lemon glaze by whisking powdered sugar with lemon juice and zest.
  11. Drizzle glaze over rolls after cooling slightly.
