  • 50g sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch, dissolved in 1 tbsp water
  • 250g cream cheese, softened
  • 100g powdered sugar
  • 100g pistachio paste
  • 1 tsp vanilla extract
  • 200ml heavy cream, cold
  • 2 eggs
  • 50g sugar
  • 50g sifted flour
  • ½ tsp baking powder
  • 200g white chocolate
  • 100ml heavy cream
  • 2 tbsp pistachio paste
  • Green food coloring (optional)
  • Crushed pistachios
  • Fresh raspberries

Instructions

  1. Prepare the raspberry center by cooking fresh raspberries with sugar and lemon juice, then thicken with cornstarch slurry and freeze in molds.
  2. Make the cheesecake filling by blending cream cheese, powdered sugar, pistachio paste, and vanilla extract; fold in whipped cream.
  3. Assemble domes by layering cheesecake filling around frozen raspberry centers in silicone molds, then freeze again.
  4. Bake a light sponge base, cut into rounds, and press onto the frozen cheesecakes.
  5. For the mirror glaze, heat heavy cream and mix with white chocolate and pistachio paste until smooth; cool slightly before glazing.
  6. Unmold domes, coat with glaze, and garnish with crushed pistachios and fresh raspberries before serving.
