  • 50 g granulated sugar (¼ cup)
  • 1 large egg (room temperature)
  • ½ tsp vanilla extract
  • 160 g all-purpose flour (1⅓ cups)
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 100 g chocolate (½ cup + 1 tbsp)
  • 45 g pistachios, crushed (⅓ cup)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, beating until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt; gradually add to the wet ingredients until just combined.
  5. Fold in chocolate chips and crushed pistachios.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each.
