  • 4 slices of sourdough or crusty bread
  • 4 tablespoons basil pesto
  • 1 1/2 cups shredded mozzarella cheese (or 4 slices fresh mozzarella)
  • 2 tablespoons unsalted butter, softened
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Spread 1 tablespoon of pesto on one side of each slice of bread.
  2. On two slices (pesto side up), layer shredded mozzarella or fresh mozzarella. Optionally sprinkle with grated Parmesan.
  3. Top with the remaining bread slices (pesto side down) to form sandwiches.
  4. Butter the outside of each sandwich generously.
  5. Heat a non-stick skillet over medium heat and grill each sandwich for about 2-3 minutes per side until golden brown and the cheese is melted.
  6. Slice in half and serve warm.
