  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese
  • Chopped cilantro
  • Sour cream
  • Diced avocado
  • Jalapeños

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and seasonings; sauté for 5–6 minutes until mostly cooked.
  2. Stir in uncooked rice and Rotel; cook for 1–2 minutes.
  3. Pour in chicken broth, bring to a boil, then cover and simmer for 20–25 minutes until the rice is tender.
  4. Stir in nacho cheese sauce and 1 cup of shredded cheese until melted and creamy.
  5. Sprinkle remaining cheese on top, cover for 5 minutes to let it melt. Serve warm with desired toppings.
