Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped parsley (for garnish)
  • Crushed red pepper flakes (for garnish)
  • Shredded cheddar or mozzarella cheese (for garnish)

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Add chicken pieces, season with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown (5–7 minutes) and set aside.
  3. Deglaze the pan with chicken broth by scraping up browned bits.
  4. Stir in honey BBQ sauce and soy sauce (if using), then simmer for 2–3 minutes.
  5. Add penne pasta and enough water to cover it (about 1 to 1½ cups). Cover and simmer for 12–15 minutes until tender, stirring occasionally.
  6. Return cooked chicken to the skillet and combine everything; simmer for another 2–3 minutes.
  7. Taste and adjust seasoning as needed. Garnish and serve!
