  • 1 ½ lbs sirloin or ribeye steak
  • 12 oz cheese tortellini
  • 6 tbsp unsalted butter
  • 4 cloves garlic
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • ½ tsp red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped

Instructions

  1. Cook the tortellini according to package instructions in salted boiling water until al dente. Reserve ½ cup pasta water before draining.
  2. Season steak cubes with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 2–3 minutes on each side until browned. Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add red pepper flakes (if using), Dijon mustard, lemon juice, parsley, and chives.
  4. Return the tortellini and steak bites to the skillet; toss well in the sauce. Gradually add reserved pasta water for desired consistency and stir in Parmesan until creamy.
  5. Serve hot with additional garnishes of Parmesan and herbs.
