  • 1 cup grated zucchini

  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1/2 cup walnuts (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and line muffin tins with paper liners.
  2. In a large bowl, whisk together sugar, flour, cinnamon, baking soda, salt, and walnuts. Stir in the grated zucchini and carrots until well mixed.
  3. In another bowl, combine applesauce, maple syrup, eggs, avocado oil, and vanilla extract. Pour this mixture into the dry ingredients.
  4. Gently fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. Scoop batter into prepared muffin tins and bake for 25-35 minutes or until a toothpick comes out clean.
  6. Allow cooling in the pan for about 7 minutes before transferring to a wire rack.
