  • 2 cups grated zucchini

  • 1 pint fresh blueberries
  • 1 cup icing sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon heavy cream

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. In a large mixing bowl, whisk together eggs, cooking oil, vanilla essence, and white sugar until well combined.
  4. Add grated zucchini and stir gently until evenly distributed.
  5. In another bowl, whisk together flour, salt, baking powder, and baking soda. Gradually add to the wet mixture while stirring until just combined.
