  • 1/2 cup unsalted butter
  • 1 tablespoon instant coffee powder
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, whisked
  • 3/4 cup all-purpose flour
  • For the Frosting: 1-2 teaspoons instant coffee powder
  • 1 tablespoon boiling water
  • 1/2 cup unsalted butter, softened
  • 1.52 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the dark chocolate and unsalted butter together in a bowl over simmering water or in the microwave.
  3. In another bowl, mix granulated sugar, instant coffee powder, vanilla extract, whisked eggs, and salt until well combined.
  4. Combine the melted chocolate mixture with the egg mixture, then gently fold in the all-purpose flour until just combined.
  5. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick inserted comes out slightly sticky.
  6. Allow to cool before preparing the frosting by mixing dissolved instant coffee into whipped butter while gradually adding sifted powdered sugar.
  7. Spread the frosting over cooled brownies, cut into squares, and serve.
