  • 1 jalapeño (seeded and finely chopped)

  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 14.5 ounces diced tomatoes (undrained)
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 15 ounces black beans (drained and rinsed)
  • 1 cup frozen corn
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Shredded cheese
  • Sour cream
  • Sliced avocado
  • Tortilla strips or chips
  • Extra lime wedges

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add diced onion, bell pepper, and optional jalapeño; sauté for about 5 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Mix in cumin, chili powder, smoked paprika, and oregano; toast for 1 minute before adding diced tomatoes.
  4. Pour in beef broth and water; bring to a boil. Stir in rice, reduce heat to low, and simmer for about 15 minutes until rice is tender.
  5. Add black beans and corn; simmer for an additional 5 minutes to heat through.
  6. Season to taste with salt and pepper; stir in lime juice and cilantro before serving.
