Mediterranean Marinated Cauliflower Salad is a colorful and refreshing dish that embodies the vibrant flavors of the Mediterranean. This salad combines crisp cauliflower, juicy cherry tomatoes, and tangy olives, all tossed in a zesty olive oil dressing.

  • 1 medium head of cauliflower, cut into small florets
  • 1 ½ cups cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ⅓ cup black olives (Kalamata)
  • ⅓ cup green olives
  • ¼ cup fresh parsley, chopped
  • ¼ cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Blanch cauliflower florets in boiling water for 1-2 minutes until tender-crisp. Transfer immediately to an ice bath to stop cooking.
  2. In a large mixing bowl, combine blanched cauliflower with cherry tomatoes, red onions, olives, and parsley. Toss gently to mix everything together without breaking the cauliflower florets.
  3. In a small bowl, whisk together olive oil, vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes until smooth.
  4. Pour the dressing over the salad mixture and toss well to coat all ingredients evenly. For enhanced flavor, refrigerate for at least 30 minutes before serving.
