  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté diced onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds. Remove from heat.
  2. In a large mixing bowl, combine the sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Mix until well combined.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. Heat the remaining olive oil in the skillet over medium heat. Cook each patty for about 5–6 minutes on each side until golden brown and cooked through.
  5. Drain on paper towels before serving warm with your choice of garnishes or dipping sauces.
