  • 1 pound Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 1 ½ pounds green beans, trimmed
  • 1 tablespoon tomato paste
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 3 tablespoons chopped fresh basil
  • 2 teaspoons lemon juice
  • 2 teaspoons salt
  • ¼ teaspoon pepper

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. In a Dutch oven, heat the olive oil over medium heat and sauté the onion until softened (about 5 minutes). Stir in garlic and cook for another 30 seconds.
  3. Add water, baking soda, green beans, and potatoes. Simmer on medium-low for about 10 minutes.
  4. Mix in tomato paste, diced tomatoes, salt, and pepper; stir well.
  5. Cover and bake in the preheated oven for 40 to 50 minutes until vegetables are tender.
  6. Stir in fresh basil and lemon juice before serving warm or at room temperature.
