  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar (or granulated sugar)
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt or sour cream
  • 3/4 cup walnuts or pecans, chopped
  • 1/3 cup maple syrup (for topping)

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, sift together flour, baking soda, and salt; set aside.
  3. In a mixer, cream butter and brown sugar until fluffy. Add maple syrup and mix for another minute.
  4. Beat in eggs one at a time, then add mashed bananas and vanilla until combined.
  5. Gradually mix in dry ingredients alternating with yogurt until just combined; fold in most of the nuts.
  6. Pour batter into the loaf pan and top with reserved nuts. Bake for 50–60 minutes or until a toothpick comes out clean.
  7. Drizzle warm bread with additional maple syrup before cooling completely in the pan.
