  • 1 egg, at room temperature
  • 2 tsp vanilla bean paste
  • 1/2 cup granulated sugar (for frosting)
  • 1/2 tbsp culinary lavender (for frosting)
  • 4 oz cream cheese
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 cup powdered sugar
  • 1/2 tbsp culinary lavender (for frosting)
  • 1 tsp vanilla bean paste (for frosting)
  • purple food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and Earl Grey tea.
  3. In another bowl, beat softened butter and sugar until fluffy; mix in egg and vanilla.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Scoop rounded balls of dough onto the prepared baking sheet and flatten slightly.
  6. Bake for about 9 minutes or until edges turn lightly golden; cool before frosting.
  7. To make the lavender cream cheese frosting, beat softened cream cheese with unsalted butter until creamy.
  8. Gradually add powdered sugar while mixing; then mix in culinary lavender and vanilla bean paste.
  9. Optionally add purple food coloring until desired shade is reached.
  10. Once cookies are completely cool, spread a generous amount of frosting on top.
