  3. Gradually add 1 cup of sugar while beating, then increase speed to high and whip until stiff peaks form (5–7 minutes).
  4. Sift together the remaining sugar and cake flour in another bowl. Gently fold into the whipped egg whites.
  5. Add vanilla extract and rainbow sprinkles, folding gently until evenly distributed.
  6. Transfer the batter into an ungreased tube pan without tapping down.
  7. Bake for about 45 minutes or until golden brown and springs back when lightly touched.
  8. Remove from the oven and cool upside down on a wire rack.
