- 2 bunches curly kale
- 1 cup croutons
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- Prepare the kale by removing stems, washing thoroughly, and placing in a bowl.
- Massage the kale with about 1 teaspoon of sea salt for 1-2 minutes until softened.
- Crush or chop the croutons and add them to the kale.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, and black pepper.
- Pour the dressing over the salad along with grated Parmesan cheese and toss well.
