Ingredients

  • 2 bunches curly kale
  • 1 cup croutons
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the kale by removing stems, washing thoroughly, and placing in a bowl.
  2. Massage the kale with about 1 teaspoon of sea salt for 1-2 minutes until softened.
  3. Crush or chop the croutons and add them to the kale.
  4. In a small bowl, whisk together olive oil, lemon juice, minced garlic, and black pepper.
  5. Pour the dressing over the salad along with grated Parmesan cheese and toss well.
  6. Serve immediately or store in an airtight container in the fridge for up to 2-3 days.
