Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, melt butter over medium heat. Add the rinsed rice and salt, toasting for about 3 minutes while stirring.
  3. Pour in the water, lemon zest, and lemon juice. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
  4. Remove from heat and let it rest covered for an additional 5-10 minutes.
  5. Fluff the rice with a fork, sprinkle with turmeric if desired, and garnish with parsley before serving.
