4 cod fillets (approximately 6 ounces each)
2 tablespoons olive oil
Salt and black pepper to taste
1 teaspoon garlic powder
1/3 cup plain Greek yogurt or sour cream
2 tablespoons mayonnaise (optional)
1 tablespoon fresh dill, finely chopped
1 tablespoon freshly squeezed lemon juice
1 teaspoon grated lemon zest
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the cod fillets on the baking sheet, drizzle with olive oil, and season with salt, black pepper, garlic powder, and paprika if desired.
Bake for 12 to 15 minutes, or until the fish flakes easily with a fork.
While the cod bakes, mix Greek yogurt or sour cream with mayonnaise (if using), dill, lemon juice, lemon zest, garlic (if using), salt, and pepper in a bowl until smooth.
Once cooked, top each fillet with the lemon-dill sauce and garnish with lemon slices before serving.
