  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 tomatoes, peeled and chopped
  • 1/4 cup tomato paste
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon red pepper flakes (or to taste)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • Salt and black pepper to taste
  • Lemon wedges
  • Fresh parsley or mint

Instructions

  1. In a bowl, mix warm water, sugar, and yeast; let sit until foamy.
  2. Combine flour and salt in another bowl; add to yeast mixture with olive oil and mix into dough.
  3. Knead the dough on a floured surface for about 5–7 minutes until smooth.
  4. Allow the dough to rise in an oiled bowl for about 1–2 hours until doubled in size.
  5. For the topping, combine ground meat, onion, bell pepper, tomatoes, tomato paste, parsley, and spices in a bowl.
  6. Preheat oven to 450°F (230°C) and prepare baking sheets with parchment paper.
  7. Roll out dough into thin circles; spread topping evenly over each circle.
  8. Bake for 10–15 minutes until golden brown and cooked through.
  9. Serve warm with lemon wedges and fresh herbs.
