  • 1/2 tsp baking soda
  • 12 star anise
  • 2 crushed cardamom pods
  • 1 cinnamon stick
  • 1/4 tsp salt
  • 2 cups whole milk (or plant-based alternative)
  • Sugar or honey to taste
  • Crushed nuts (for garnish)

Instructions

  1. Boil the water in a saucepan and add the green tea. Boil for 5 minutes.
  2. Stir in the baking soda, boiling for an additional 2 minutes until the water turns deep red.
  3. Add star anise, cardamom, and cinnamon; boil for a minute.
  4. Lower heat and simmer for 20-30 minutes until reduced by half.
  5. Stir in salt, then add milk and bring to a boil while stirring constantly until it turns pink.
  6. Strain into cups to remove spices and leaves.
