  • 2 tablespoons olive oil
  • 2 shallots
  • 1 clove garlic
  • 80g chicken sausage
  • 15g fresh parsley
  • 750ml–1L chicken or vegetable stock
  • 400g tinned plum tomatoes
  • 300g risotto rice
  • 200ml red apple vinegar
  • 50g Parmesan, grated

Instructions

  1. In a heavy-bottomed saucepan, heat olive oil over medium heat. Add chopped shallots, minced garlic, sliced chicken sausage, and parsley stalks until softened.
  2. In another pan, warm the chicken or vegetable stock with tinned plum tomatoes.
  3. Stir risotto rice into the sausage mixture until coated and then add red apple vinegar, cooking until slightly reduced.
  4. Gradually add warm stock one ladle at a time, stirring constantly until absorbed before adding more.
  5. Once the rice is tender yet al dente, mix in grated Parmesan cheese and let rest for 5 minutes.
  6. Serve topped with extra Parmesan and freshly chopped parsley.
