- 1/2 lb ground beef
- 1/2 cup plain bread crumbs
- 1/2 cup fresh grated parmesan cheese
- 1 egg
- 1/2 yellow onion (minced)
- 4 garlic cloves
- 1 tbsp dried parsley
- 2 tsp dried basil
- 1 tsp crushed red pepper flakes (more or less to taste)
- 1 tsp salt (more or less to taste)
- 1/2 tsp black pepper (more or less to taste)
- 2 tbsp olive oil (for cooking)
- 1/2 yellow onion (diced)
- 2 medium carrots (diced)
- 2–3 tomatoes on a vine (diced)
- 4 garlic cloves
- 1 cup water
- 5–6 cups beef stock
- 4 oz tomato paste
- 14–16 oz gnocchi (homemade or ready-to-use)
- 1/4 cup fresh grated or shaved parmesan cheese
- In a mixing bowl, combine ground beef, bread crumbs, parmesan cheese, egg, minced onion, garlic cloves, parsley, basil, red pepper flakes, salt, and black pepper. Mix well.
- Shape the mixture into 1-inch meatballs and place them on a baking sheet.
- Heat olive oil in a large pot over medium heat and sauté diced onion and carrots until softened. Add minced garlic and cook for another minute.
- Stir in diced tomatoes, water, and beef stock along with tomato paste until combined.
- Gently add meatballs to the simmering soup and cook for about 20 minutes until fully cooked.
- Add gnocchi and seasonings; cook according to package directions until gnocchi floats.
- Serve hot topped with freshly grated parmesan cheese.
