  • 1/2 lb ground beef
  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. In a mixing bowl, combine ground beef, bread crumbs, parmesan cheese, egg, minced onion, garlic cloves, parsley, basil, red pepper flakes, salt, and black pepper. Mix well.
  2. Shape the mixture into 1-inch meatballs and place them on a baking sheet.
  3. Heat olive oil in a large pot over medium heat and sauté diced onion and carrots until softened. Add minced garlic and cook for another minute.
  4. Stir in diced tomatoes, water, and beef stock along with tomato paste until combined.
  5. Gently add meatballs to the simmering soup and cook for about 20 minutes until fully cooked.
  6. Add gnocchi and seasonings; cook according to package directions until gnocchi floats.
  7. Serve hot topped with freshly grated parmesan cheese.
