  • 2 medium yellow onions
  • 2 lbs boneless skinless chicken breast
  • 1 medium red bell pepper
  • 3 medium carrots
  • 1 (15-oz) can tomato sauce
  • 1 (6-oz) can tomato paste
  • Juice of ½ lemon
  • 2 garlic cloves
  • 1 tablespoon minced fresh ginger
  • 3 tablespoons curry powder
  • 2 teaspoons garam masala
  • Salt to taste
  • ½ cup plain Greek yogurt
  • ½ cup half-and-half

Instructions

  1. Prepare the slow cooker by layering sliced onions at the bottom.
  2. In a large bowl, mix together cubed chicken, diced bell pepper, diced carrots, tomato sauce, tomato paste, lemon juice, minced garlic, ginger, curry powder, garam masala, and salt.
  3. Pour the mixture over the onions in the slow cooker.
  4. Dot with pieces of chilled butter on top of the chicken mixture.
  5. Cover and cook on high for about 4½ hours or low for 6½ hours.
  6. Once cooked, stir well and allow to cool for 5–10 minutes before mixing in yogurt and half-and-half.
  7. Serve hot over rice or with naan.
