  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 to 4-1/2 teaspoons chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered or 2 Roma tomatoes, seeded and chopped
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced, seeds separated
  • 2 tablespoons finely chopped cilantro
  • 1 clove minced garlic or 1/4 teaspoon garlic powder
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper. Add chicken and coat well. Cover and marinate for at least 30 minutes or overnight.
  2. Prepare the Avocado Salsa: Mix together chopped avocados, cherry tomatoes (or Roma tomatoes), corn, red onion, red bell pepper, jalapeno pepper, cilantro, minced garlic (or garlic powder), lime juice, cumin, salt, and pepper in a separate bowl.
  3. Cook the Chicken: Heat a skillet over medium-high heat. Remove chicken from marinade and cook for about 5 minutes on each side until cooked through.
  4. Serve: Slice the chicken and top with avocado salsa before enjoying.
