  • 1 cup cooked rice (white or brown)
  • ΒΌ cup fresh coriander (chopped)
  • 2 ripe avocados (sliced)
  • Salt and pepper (to taste)
  • Oil (for cooking)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a bowl, whisk together honey, lime juice, lime zest, and minced garlic.
  3. Heat oil in a frying pan over medium-high heat and cook chicken for 6-7 minutes per side until golden brown.
  4. Brush glaze over chicken during the last 2 minutes of cooking. Let rest for 5 minutes before slicing.
  5. Mix cooked rice with coriander and lime juice; season with salt.
  6. Toss avocado slices with lime juice, salt, and pepper.
  7. Assemble by layering rice in a ring mold, followed by avocado, then sliced chicken on top.
  8. Carefully remove the mold and serve immediately.
