  • 1 tsp honey
  • 1 tsp soy sauce or tamari
  • 1 tsp olive oil or sesame oil
  • 1 cup cooked basmati rice
  • 1 avocado, sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped parsley
  • 1 tsp olive oil
  • Squeeze of lemon juice
  • Salt & pepper to taste

Instructions

  1. In a mixing bowl, combine honey, soy sauce, and olive oil; brush over the salmon fillet and marinate.
  2. Heat a skillet over medium-high heat and cook the marinated salmon for about 3-4 minutes on each side until caramelized.
  3. In another bowl, mix cherry tomatoes, chopped mint, parsley, olive oil, lemon juice, salt, and pepper.
  4. To assemble, layer cooked basmati rice in a serving bowl, top with salmon, avocado slices, cucumber, and tomato herb salad.
