  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 tablespoons soy sauce
  • 1/3 cup honey
  • 1 cup uncooked long grain or jasmine rice
  • 2 cups chicken broth (or vegetable broth)
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, combine ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil (optional), salt, and pepper. Form into meatballs.
  3. Sear meatballs in a skillet over medium heat until brown on all sides.
  4. Prepare the honey garlic sauce by combining honey, soy sauce, ketchup, water, and minced garlic in a saucepan; simmer until combined.
  5. Spread rice and vegetables in the baking dish; nestle meatballs on top and drizzle with sauce.
  6. Cover and bake for 40 minutes; uncover and bake an additional 10–15 minutes until rice is cooked.
