  • 4 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • Salt to taste
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, coat chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and pepper.
  3. In another bowl, mix cubed potatoes, sliced carrots, and bell pepper with olive oil and seasonings.
  4. Spread vegetables in a baking dish and place seasoned chicken on top.
  5. Roast for about 50-55 minutes, turning the chicken halfway through until golden brown and cooked through.
  6. Garnish with fresh parsley before serving.
