  • 1 pound baby potatoes (halved)
  • 2 medium carrots (sliced)
  • 1 large bell pepper (chopped)
  • 1 medium zucchini (sliced)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine olive oil, garlic powder, thyme, rosemary, salt, and pepper. Add chicken drumsticks and coat well.
  3. Chop baby potatoes, carrots, bell pepper, and zucchini into bite-sized pieces.
  4. Spread marinated chicken on one side of a baking sheet; arrange vegetables on the other side.
  5. Roast for approximately 45 minutes until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
