  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • Salt & pepper
  • 1 tsp paprika
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 250 ml chicken broth
  • 200 ml heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp parsley
  • 1 tsp oregano
  • 800 g potatoes
  • 50 g butter (for mashing)
  • 100 ml warm milk
  • 400 g baby carrots
  • 1 tbsp butter (for glazing)
  • Honey or brown sugar

Instructions

  1. 1. Season chicken with paprika, salt, and pepper. In a skillet, heat olive oil over medium heat and sear the chicken until golden brown. Remove from skillet.
  2. 2. In the same skillet, melt butter and sauté garlic until fragrant. Add chicken broth and heavy cream; stir in mustard and herbs. Simmer until thickened, then return chicken to pan to cook through.
  3. 3. Boil potatoes until tender. Drain and mash with butter and warm milk; season with salt and nutmeg.
  4. 4. Steam carrots until tender, then toss in melted butter and honey or brown sugar until glazed.
  5. 5. Serve chicken over mashed potatoes with glazed carrots on the side.
