  • 1 3/4 cups spelt or whole wheat flour
  • 1 1/2 cups diced strawberries (fresh or frozen)
  • 1/2 cup quick or rolled oats
  • 2 tsp pure vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp cane or coconut sugar (for sprinkling optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat oven to 375°F and line a muffin tin with parchment paper liners.
  2. Dice strawberries and toss with 1 tablespoon of flour; set aside.
  3. In a mixing bowl, whisk together eggs, Greek yogurt, maple syrup, avocado oil, vanilla extract, cinnamon, baking powder, baking soda, and salt until smooth.
  4. Gently fold in oats and flour until just combined. Carefully add floured strawberries to the batter.
  5. Fill each muffin cup evenly and sprinkle reserved strawberries on top.
  6. Bake for about 22 minutes or until a toothpick comes out clean.
  7. Let cool in the tin for 10 minutes before transferring to a wire rack.
