  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic (minced)
  • ½ cup plain Greek yogurt
  • 1½ cups shredded sharp cheddar cheese (divided)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp paprika or dried thyme

Instructions

  1. Preheat oven to 400°F (205°C).
  2. Halve the spaghetti squash and scoop out seeds. Brush cut sides with olive oil and place face-down on a baking sheet. Roast for 35–40 minutes until tender.
  3. Sauté onions in olive oil until softened; add minced garlic for another minute.
  4. Shred roasted squash into noodle-like strands.
  5. In a bowl, mix shredded squash with onions, garlic, Greek yogurt, 1 cup cheese, salt, pepper, and optional spices.
  6. Transfer to a greased casserole dish; top with remaining cheese.
  7. Bake at 375°F for 20–25 minutes until bubbly and golden.
  8. Let cool slightly before serving.
