  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • Juice of ½ lime (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and cook until soft (about 3 minutes).
  3. Stir in minced garlic and cook for another 30 seconds.
  4. Add ground turkey; break it up with a wooden spoon as it cooks until no longer pink (5–6 minutes).
  5. Season with smoked paprika, cumin, chili powder, salt, and black pepper.
  6. Mix in sliced bell peppers; cook until slightly tender yet crunchy (3–4 minutes).
  7. Pour in chicken broth and tomato paste; stir to combine and simmer for 2–3 minutes.
  8. Remove from heat; squeeze lime juice if desired.
  9. Garnish with fresh cilantro or parsley before serving.
