  • 2 salmon fillets
  • 2 cups baby potatoes
  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup shredded mozzarella or cheese blend
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat your oven to 400F (200C). Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  2. Prepare asparagus by drizzling with olive oil, seasoning with salt and pepper, topping with cheese, and placing it on another baking sheet. Bake during the last 10 minutes of the potatoes’ cooking time.
  3. Season salmon fillets with paprika, garlic powder, salt, and pepper. Heat a cast iron grill pan over medium-high heat with olive oil. Grill salmon for about 4-5 minutes per side until cooked through.
  4. Serve each salmon fillet alongside roasted garlic potatoes and cheesy asparagus.
