  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper
  • 1 cup brown rice
  • 2 cups water
  • Pinch of salt
  • 2 carrots, sliced into coins
  • 1 tsp olive oil
  • 1 tsp dried thyme or oregano
  • Salt & pepper
  • 3 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 1 tsp fresh lemon juice
  • 1 tsp red chili flakes
  • Black pepper
  • Fresh parsley, chopped

Instructions

  1. In a saucepan, combine brown rice, water, and a pinch of salt. Bring to a boil; reduce heat to low and simmer for about 20 minutes until soft.
  2. Rub chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper. Grill over medium heat for 5-7 minutes on each side until cooked through; slice after resting.
  3. Sauté sliced carrots in olive oil with thyme, salt, and pepper until tender-crisp (about 5-7 minutes).
  4. Mix mayonnaise, Greek yogurt, lemon juice, red chili flakes, and black pepper in a bowl until smooth.
  5. Layer rice as the base; add grilled chicken and sautéed carrots; drizzle with sauce and garnish with parsley.
